A few years ago I visited Modena, Italy where I toured a production facility where Parmigiano Reggiano cheese is made. Using just three ingredients; milk, salt and rennet, and eight centuries of cheese making experience, cheese artisans in Italy craft what is reverently known around the world as the King Of Cheese.
The wheels of cheese featured here; weighing 600 liters each, were in the ripening room. Each wheel clearly displays the Protected Designation of Origin (PDO) mark, indicating it is entitled to be called Parmigiano-Reggiano. These marks are subdivided into marks of origin and grade selection. A few hours after being molded, the cheese maker places a special marking band engraved the month and year of production as well as its cheese dairy registration number and the unmistakable dotted inscriptions around the complete circumference of the cheese wheel. This band is removed after a few days, whereupon the infant cheese wheel is immersed in a water and salt-saturated solution. After this, the cheese if moved into a cool dark resting room for a minimum of 12 months.
