Festive and colorful, the bright orange pumpkin is a harbinger of Fall and the start of the Holiday season. While they come in all sizes and shapes, I am partial to the Cinderella pumpkin, squat, bulging and symmetrically round.
My brothers and I fondly remember hunting the dusty pumpkin patch, searching for just the right shape gourd to be made into a glowing Jack o'lantern each October during our youth.
The name Jack o'lantern comes from the phenomenon of a strange light flickering over peat bogs at night - doesn't that just sound spooky? This term has been used in American English to describe a lantern made from a hollowed-out pumpkin since the 19th century, but originated in 17th-century Britain, where it was used to refer to a man with a lantern or to a night watchman.
Of course, pumpkins are not just for carving. Rich in vitamins, minerals and antioxidants, the fruit is incredibly healthy. Additionally, it's low calorie count makes it a diet friendly food.
